WThis is a home-style take on a drink from the seasonal menu. It's a party-sized pre-mixed that is loaded full of essence associated with festive period, which makes it perfect for your celebration. Reserve the remaining cordial you can use for breakfast cocktails, sweets, or to make another batch of bikinis.
Bikini Recipe
Makes enough for 10 guests
Ingredients for the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar
To make the Premix (yields 850ml, enough for 10)
400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml citrus syrup (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, for finishing
Instructions
To prepare the Cordial: Place the listed items in a saucepan, bring to a simmer, mixing until the sugar dissolves. Next, remove from the stove allowing it to reach room temperature completely. Transfer to a clean bottle, seal and refrigerate it in the fridge, where it will keep for around one month.
To make Batch Mix: Mix all the liquid ingredients into one sizeable container, let it rest for an hour, then pass it through , ideally through cheesecloth, making it completely strained.
When ready to serve: Measure 85ml of the cocktail base to a stirring glass packed with ice, and stir carefully for a minute to cool it down. Filter into an cold coupe glass or similar, decorate with some cranberries and finish using a brief mist of the essential oil over the drink.
